Artrageous Stuffed Chicken Recipe

Ingredients
  • 4 boneless, skinless chicken breast halves, fillet removed
  • 4 Tbsp brie cheese, diced small
  • 2 Tbsp fine dry breadcrumbs
  • 2 cloves garlic, minced
  • 4 Tbsp minced raw small shrimp
  • 2 Tbsp chopped green onions
  • 1 egg, beaten
  • 1 tsp freshly ground black pepper
  • 2 Tbsp vegetable oil
  • About 1/2 cup chicken stock or dry white wine

Directions
  1. Preheat oven to 350F.
  2. Place chicken breasts, smooth side down, on a cutting board. Using a sharp knife, cut a horizontal slit into the edge of each chicken breast to make a pocket for stuffing.
  3. In a bowl, toss brie with breadcrumbs, and blend in garlic, shrimp, onions, egg and pepper.
  4. Stuff a quarter of the mixture into each breast pocket (the chicken's, not yours lol). Use large toothpicks or bamboo skewers to "pin" each pocket closed.
  5. Heat oil in an oven-proof skillet over medium-high heat and brown chicken breasts on both sides.
  6. Transfer chicken to oven and bake for 35 to 40 minutes or until a meat thermometer inserted into meat of chicken reads 170F.
  7. Remove chicken to platter and cover loosely with foil.
  8. Return pan to stovetop on medium-high heat and add enough chicken stock or wine to bring to about 1 cup total liquid. Bring to a boil while scraping up brown bits, and cook until reduced by half.
  9. Slice chicken and plate, pouring sauce over. Serve with steamed rice or your favourite potatoes, and steamed julienned or baby veggies.

As soon as I saw the ingredient "brie", I was won over - wow, showstopper indeed...can't wait for company so I can try this!
