How to make it

  • For preparation of the lobster, detach head from the tail. Remove all the flesh from the tail and shred using your hands. Retain the shells, but do not break them.
  • Cut the head lengthwise.
  • In a deep non-stick pan, heat olive oil and saute onions.
  • When onions brown slightly, add the evaporated milk and parsley (if you like). Bring the milk to a boil, and put in the lobster shells. Put in the lobster head, internal side down into the milk. (this gives the sauce a very fragrant lobster aroma).
  • Reduce to low heat and simmer for 10 minutes.
  • Bring to boil a pot of water and cook pasta as per packet instructions, or to desired consistency. Run under cold water to remove excess starch.
  • Add prawns, cheese, tomato, salt and pepper into the simmering sauce. Give it a quick mix and simmer for a further 2 minutes.
  • Remove from heat, remove shells and lobster head, and put in the pasta and lobster flesh. Stir well to evenly mix sauce with the pasta.
  • Plate up and enjoy!
