Pumpkin-lemon cream pie

- 2 eggs slightly beaten shopping list
- 1 can pumpkin (16 oz) shopping list
- 2/3 cup sugar shopping list
- 1 tsp.cinnamon shopping list
- 1/2 tsp. salt shopping list
- 1/2 tsp. ginger shopping list
- 1 1/3 cup half & half shopping list
- 1 9" pie shell shopping list
- sour cream layer: shopping list
- 1 cup sour cream shopping list
- 2TBSP.brown sugar shopping list
- 1 TBSP.lemon juice shopping list
- Grated peel of 1 lemon shopping list
- 1/4 cup chopped pecans shopping list
How to make it
- Mix first seven ingred. together
- Pour mixture intopie shell & bake @ 425 for 15 min.
- Reduce heat to 350 Continue baking about 45 min. or until inserted
- knife comes out clean
- cool 20 min.
- Blend together sour cream, brown sugar, lemon juice & lemon peel
- Spread sour cream mixture evenly over the pie Bake 10 min. more
- Sprinkle top with chopped pecans
- serve warm or cold
