How to make it

  • boil potatoes in salted water
  • in a saucepan melt the butter and add the garlic
  • cook over low heat until fragrant (do not burn)
  • turn up the heat and add the mushrooms, taking care not to
  • brown the butter and garlic
  • once mushrooms are cooked add the potatoes and half the cream
  • allow to simmer over low heat for 20 minutes taking care not to burn
  • add the rest of the cream and rosemary and cook a further 15 minutes until sauce thickens
  • season
  • serve with any main meat of your choice
