How to make it

  • In a medium size sauce pot, over medium heat, cook shallots, pepper, peas, and corn, stirring until shallots are translucent.
  • Add herbs, lima beans and vegetable stock, and white wine.
  • Raise heat and bring liquid to a boil. Simmer liquid to reduce by half, about 10 minutes. Add tomatoes, black beans, and white beans and heat through.
  • Add butter, lemon juice, balsamic vinegar, and salt and pepper to taste.
