Cherry Tulip

- 1 pound fresh sour cherries shopping list
- 2 cups water -- divided shopping list
- 4 cups superfine sugar shopping list
- 28 ounces soda water -- chilled (1 bottle) shopping list
How to make it
- Wash the cherries and put them into a saucepan with one cup of the water.
- Bring to a boil, reduce heat and simmer for 20 minutes.
- Filter the liquid through a cheesecloth, pressing the cherries gently until all the juice is removed; reserve the juice.
- At the same time, simmer 4 cups of sugar with the one remaining cup ofwater for 5 minutes.
- Add the cherry juice and simmer for 15 minutes more.
- Remove from the heat, cool and pour into a clean jar to be stored in the refrigerator.
- When ready to serve put 3 to 4 tablespoons of this fruit syrup into an icedglass; add soda water and 2 to 3 ice cubes.
- Stir well and serve.
- Serves 8 to 10.
