Basmati Rice my way

- basmati rice shopping list
- 1 medium onion peeled shopping list
- 4 cloves shopping list
- 3 green cardamom pods opened shopping list
- 2 cinnamon sticks shopping list
- 2 teaspoons mustard seeds shopping list
- 1 medium tomato sliced into 1/4 inch slices (leave out ends) shopping list
- 2 teaspoons knorr/oxo (or similar) chicken stock powder. shopping list
- 2 or three pinches of saffron shopping list
- tspn salt shopping list
- 1 tablespoons butter or ghee shopping list
- 3 cups water shopping list
How to make it
- Take 2 cups basmati rice (wash if rice is starchy and drain)
- open up cardamom pods (must be green not white and take out the seeds
- Melt butter or ghee into frying pan
- Add mustard seeds, 4 cloves,cardamom and cinnamon sticks and saute for about 5 minutes on low to medium heat.
- Add the finely chopped onion and saute until golden brown.
- Add the rice and stir all together
- Add 3 cups water, chicken stock 2 or 3 pinches of saffron, salt and sliced tomatoes
- cover and cook over a medium or low heat until water reduces to almost nothing on bottom of pan
- Shake rice a few times to mix again (do not stir).
- Turn off the heat leave the rice fully covered
- In 10 to 15 minutes just before serving, remove cinnamon sticks and serve with curried prawns, beef, lamb etc.
