How to make it

  • Take 2 cups basmati rice (wash if rice is starchy and drain)
  • open up cardamom pods (must be green not white and take out the seeds
  • Melt butter or ghee into frying pan
  • Add mustard seeds, 4 cloves,cardamom and cinnamon sticks and saute for about 5 minutes on low to medium heat.
  • Add the finely chopped onion and saute until golden brown.
  • Add the rice and stir all together
  • Add 3 cups water, chicken stock 2 or 3 pinches of saffron, salt and sliced tomatoes
  • cover and cook over a medium or low heat until water reduces to almost nothing on bottom of pan
  • Shake rice a few times to mix again (do not stir).
  • Turn off the heat leave the rice fully covered
  • In 10 to 15 minutes just before serving, remove cinnamon sticks and serve with curried prawns, beef, lamb etc.
