White Sweet Potato salad

bought some white sweet potatoes and made this and my family loved it. Of course one can use the yellow-orange kind of sweet potatoes too
Ingredients
- 4 to 6 med white sweet potatoes shopping list
- mayonaisse to bind shopping list
- 1 to 2 Tbs sweet white onion chopped shopping list
- 1 to 2 Tbs orange juice shopping list
- salt and fresh cracked pepper shopping list
- chopped fresh parsley optional shopping list
How to make it
- Boil potatoes till tender but not mushy or overly soft
- Drain, peel and chop as for potato salad
- Bind with mayonaisse mixed with a bit of orange juice
- Stir in onion, parsley if using and season with salt and pepper
- Looks like white potato salad but taste like sweet potatoes
- Serve warm or well chilled
