How to make it

  • Add the first 6 ingredients into a saucepan of cold water.
  • Cover with a lid.
  • Bring to the boil with the lid on - then take the lid off and stir 3mins.
  • Leave the lid off until cooked to a soft jelly like consistency,
  • 5 minutes extra.
  • Heat the pan with the !/2 margarine and 1/2 oil
  • Arrange the peaches in the pan and fry for 2 mins
  • Drizzle 1 teaspoon of honey evenly over the peaches.
  • Turn the slices of peaches over and arrange.
  • Add 1 dessertspoon margarine and honey into the rice mix.
  • Stir together.
  • Add the creamy rice mix evenly over the top of the peaches.
  • Pour the egg batter evenly over the top of the rice vermicelli.
  • Cover with a lid and cook for 5 mins until top is set -
  • and the peaches on the bottom are golden..
  • Add the choc bits on top of the rice vermicelli pancake.
  • Flip the pancake over onto a warm plate.
  • Sprinkle with crushed nuts and serve. Enjoy :)

    Thankyou Ed. Enjoy the process - it's worth every yummy mouthful. I had some last night in a cone - added 1/2 grated apple. YUUUMMMEEE!
