How to make it

  • Sweat garlic and white onion in oil for 1 minute.
  • Add broccoli, carrot, apple and green onion then sauté 2 minutes.
  • Add chicken stock and wine then bring to a boil then reduce to a simmer and cook 10 minutes.
  • Purée soup in food processor or blender until all is puréed then return back to pot.
  • Season with cayenne pepper, salt and cream then bring to boil and simmer 5minutes.
  • Serve in bowls garnished with tarragon.
