How to make it

  • In a large slow cooker, combine the 1st nine ingredients
  • Cover & cook on high for 7-8 hrs. or until the vegetables are tender
  • Add milk & parsley mix well
  • cover & cook 30-60 mins. longer or until heated through.
  • Garnish with chives (if desired
  • Yield: 8-10 servings (about 3 qts.

    Although I've never really used a recipe for potato soup, this is exactly the way I make mine except I use chicken broth. My mother never used the broth but it or chicken bouillon does make it richer. I can attest that this is a very good potato soup.
