Chicken With Mushrooms In Wine

- 12-14 mushrooms, stems trimmed and mushrooms left whole or halved, depending on the mushroom you use. shopping list

- 1 large onion, coarsely chopped - coarsely chopping gives that rustic appearance shopping list
- 2 parsnips, peeled and sliced or 2 carrots, peeled and sliced or omit but I like the addition because they add a natural sweetness. shopping list
- 2-3 garlic cloves, minced or finely chopped shopping list
- 2-1/2 to 3 lbs, boneless, skinless chicken thighs or breast shopping list
- NOTE: Trim fat from chicken and keep whole. You can use chicken legs as well. If you're using chicken breast, then I like to use at least 6. shopping list
- 1 (6 oz. can) tomato paste shopping list
- 3/4 cup chicken broth, low sodium shopping list
- 1/4 cup Pinot Noir OR merlot wine OR if you can't have wine, then replace the wine with more chicken broth shopping list
- NOTE: I prefer using a deep flavored white wine. Not too fruity or sweet though. shopping list
- 1-1/2 Tbsp. quick-cooking tapioca OR 1 Tbsp. cornstarch blended with the chicken broth. shopping list
- 1 tsp. granulated sugar or omit if adding parsnips or carrots shopping list
- 1-1/2 tsp. basil, dried shopping list
- 1 tsp. oregano, dried shopping list
- 1/4 tsp. pepper shopping list
- grated parmesan cheese shopping list
- Your choice of cooked pasta or a fresh loaf of crusty Italian bread. shopping list
How to make it
- Place mushrooms, onion, parsnips or carrots(your choice) and garlic in a 5 quart slow cooker.
- Top with chicken.
- In a bowl, combine tomato paste, chicken broth, wine or more broth, tapioca or cornstarch, sugar, basil, oregano and pepper.
- Pour over chicken.
- Cover and cook on low for 6 hours or until chicken is tender.
- Sprinkle individual servings with Parmesan cheese and serve with pasta of your choice or Italian bread.
- NOTE: I also like serving this recipe with new potatoes sprinkled with fresh chopped parsley.
