Ingredients

How to make it

  • Place mushrooms, onion, parsnips or carrots(your choice) and garlic in a 5 quart slow cooker.
  • Top with chicken.
  • In a bowl, combine tomato paste, chicken broth, wine or more broth, tapioca or cornstarch, sugar, basil, oregano and pepper.
  • Pour over chicken.
  • Cover and cook on low for 6 hours or until chicken is tender.
  • Sprinkle individual servings with Parmesan cheese and serve with pasta of your choice or Italian bread.
  • NOTE: I also like serving this recipe with new potatoes sprinkled with fresh chopped parsley.
