How to make it

  • In a large bowl, combine flours, sugar, salt, yeast, gluten and flaxseed.
  • In a large glass or bowl, heat milk, water and honey until just above body temperature.
  • Add liquids to the flour mixture and mix to incorporate.
  • Add cream cheese and vanilla, beat well (with a stand mixer and dough hook for 10 minutes on low speed, or equivalent by hand).
  • Cover bowl and let rest for 40 minutes.
  • Divide dough into 4 pieces, shape each into an oblong loaf and place on baking sheets (2 per sheet). Re-cover and allow to rise 2 hours.
  • Preheat oven to 350F.
  • Bake loaves for 30 minutes, cool completely on a rack.
