Bacon amp Chive Potato Salad

There must be a million different recipes for Potato salad, but this one is really yummy!
Ingredients
- 6 cups quartered unpeeled red potatoes shopping list
- 3/4 cup mayo shopping list
- 2 tbsp stone ground mustard shopping list
- 8 slices bacon, cooked and crumbled shopping list
- 1/4 cup green onions shopping list
- 1/4 cup chopped chives shopping list
- olive oil shopping list
How to make it
- Boil potatoes until tender (need to leave a little crunch to them) and drain.
- Put the potatoes back in the pot and drizzle with a little olive oil (so the potatoes don't soak up the mayo dressing while still hot)
- Mix together the mayo and mustard
- Add the potatoes to the mayo/mustard dressing
- Mix lightly
- Add the bacon, chives and green onions
- Mix all together lightly and refrigerate.
