How to make it

  • Wash and dry your chicken pieces
  • Chop up the onion and garlic and ginger and add to the chicken
  • Get out your dark and light soya sauce and vinegar and add to the chicken.
  • Add the sugar
  • Next step is to take your salt, ground peppercorns (or ground black pepper) and bay leaves and add to the chicken.
  • Add in the 1/4 tspn salt (optional) and 2 bay leaves.
  • Mix the chicken well with all these ingredients untill it turns nice and "blackish".
  • You may add more dark soya sauce if desired
  • Cover it with saran/glad wrap and put aside in the fridge.
  • We need to let this marinate for 1-3 hours (overnight if you like it will taste better)
  • When cooking add the chicken with its mixture into a pot (medium heat) and bring it up to a boil
  • Move it around the pot ever so often so that it does not stick and some water/juices is let out.
  • Now, reduce the heat to low and let it all simmer for about an hour (or until the chicken is thoroughly cooked.)
  • Serve out into a bowl with some of the sauce.
  • This will go well with steamed rice, and veggies. That's all there is to making chicken adobo. I hope you all enjoy this simple dish.
