Chicken Adobo Dark Soy Sauce Chicken

- 3lbs chicken thighs shopping list
- 2 Tbspns white vinegar shopping list
- 3 Tbspns light soya sauce shopping list
- 1/2 tspn of sugar shopping list
- 1/4 cup Tbspn dark soya sauce (the thicker the better) shopping list
- 1/4 tspn peppercorns (ground) or 1/2 Tbspn ground black pepper shopping list
- 1/4 tspn salt (optional) shopping list
- 4 garlic cloves (chopped or crushed) shopping list
- ½ inch ginger (grated or crushed) shopping list
- 2 bay leaves shopping list
- 1/4 of a medium onion (chopped) or 2 shallots finely chopped shopping list
How to make it
- Wash and dry your chicken pieces
- Chop up the onion and garlic and ginger and add to the chicken
- Get out your dark and light soya sauce and vinegar and add to the chicken.
- Add the sugar
- Next step is to take your salt, ground peppercorns (or ground black pepper) and bay leaves and add to the chicken.
- Add in the 1/4 tspn salt (optional) and 2 bay leaves.
- Mix the chicken well with all these ingredients untill it turns nice and "blackish".
- You may add more dark soya sauce if desired
- Cover it with saran/glad wrap and put aside in the fridge.
- We need to let this marinate for 1-3 hours (overnight if you like it will taste better)
- When cooking add the chicken with its mixture into a pot (medium heat) and bring it up to a boil
- Move it around the pot ever so often so that it does not stick and some water/juices is let out.
- Now, reduce the heat to low and let it all simmer for about an hour (or until the chicken is thoroughly cooked.)
- Serve out into a bowl with some of the sauce.
- This will go well with steamed rice, and veggies. That's all there is to making chicken adobo. I hope you all enjoy this simple dish.
