How to make it

  • Arrange everything on one big platter or on individual plates.
  • A bed of fresh spinach goes on the bottom.
  • Yellow rice goes on the spinach. To make yellow rice, cook your favourite rice according to the package instructions and add the turmeric to the cooking water.
  • Arrange the vegetables over top the rice. The broccoli, green beans, cabbage, carrots and bean sprouts.
  • Toss the tofu and/or hardboiled eggs over the vegetables.
  • Generously drizzle the peanut sauce over top the entire salad and garnish with peanuts and coriander.
  • Peanut sauce-Add all ingredients in a medium saucepan. Heat slowly over medium heat, whisking frequently until sauce is hot and thick. If sauce is too thick you can add a little more water.
