Cranberry Almond Bread Recipe
A delicious quick bread, also makes great muffins. I've tried using dried cranberries as well with great results. And of course, it might just not serve 12 people lol!

Ingredients
  • 2 cups flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 6 Tbsp butter, melted
  • 1 egg, lightly beaten
  • 1 Tbsp grated orange zest
  • 1 tsp almond extract
  • 1 cup fresh or frozen cranberries
  • 1 cup slivered almonds

Directions
  1. Preheat oven to 325F.
  2. In a large bowl, blend the flour, sugar, baking powder and slat.
  3. In another bowl, combine the milk, melted butter, egg, orange zest and almond extract.
  4. Add wet ingredients to dry and stir until thoroughly moistened. Fold in the cranberries and almonds.
  5. Pour the batter into a greased 9x5" loaf pan and spread evenly.
  6. Bake for 70 minutes.
  7. Cool the bread in the pan for 10 minutes and then remove; cool completely (if you can wait that long!) before slicing.
