Chicken Nicoise

- 2 good sized chicken breasts shopping list
- artichoke hearts shopping list
- capers shopping list
- Black Calamata olives shopping list
- half a head of garlic shopping list
- 1 purple onion shopping list
- 2 roma tomatos shopping list
- 1/2 cup of white wine shopping list
- 1 lemmon shopping list
- 1/3 stick of butter shopping list
- some olive oil :) shopping list
- 1/4 cup flower shopping list
How to make it
- This one is a bit more involved but well worth the effort and you will feel like a professional chef when your done ;)
- Building the amazing sauce!!
- In large sautee pan heat up butter with some olive oil.. enough to cover the whole pan bottom.
- Cut up 4 or 5 toes of garlic nice and thin like..
- add to butter olive/oil mix on med heat
- hit that with some sea or kosher salt.. REALLY brings out the garlic flavor..
- Next add chopped black olives (bout 8 - 10) and purple onion sliced thin and in half..
- by now your whole house will smell a -f'n-mazing!!
- Now add a splash of white wine and turn the heat down a bit..
- now start your chicken breasts....
- If thick enough, cut chicken breast in half and pound to about an inch thick.
- In a large sautee pan, heat up a butter/olive oil blend pretty hot but not smoking too much. Dust pounded breast (lol) with flower seasoned with salt and a tad of pepper. Quickly brown breasts on both sides and put aside on paper towels to keep less greasy.
- Back to the sauce of love,
- Add the capers and tomatos and artichoke hearts (diced just right., you know, not to small not too big ;)
- Sqeeze half a lemmon or so into sauce,
- add another splash of white wine further fueling your chef attitude,
- and some salt and a bit of pepper to taste (easy on the pepper)
- NOW TASTE IT ! Its so important to taste your dish all along the way, after every addition and adjust salt and other spices.
- If its amazing, good job. If it needs somthing, fix it! Might need more butter ;)
- Now add gourgeous goldend brown breasts into the love and VOILA!
- You can serve over noodles (wide) or rice (basmati) or just with some steamed broccoli.
- He or She will be yours forever from this amazing date night dish! ;)
