Sky High Cheesy Vegetable Pie Recipe

Ingredients

1 pkg stuffing mix, any flavour

1 egg, lightly beaten

1 onion, chopped

1 Tbsp butter

1 x 10 oz pkg frozen chopped spinach, thawed and squeezed dry

1/2 lb mozzarella cheese, grated

1/2 small red pepper, cut into thin strips

4 eggs, lightly beaten

2 tomatoes, sliced (not too thinly)

Directions

Prepare stuffing as directed on package and cool slightly. Stir in one beaten egg. Press into a greased 8" springform pan to form a crust.

Saute onion in butter until tender. Remove from heat; stir in spinach.

Sprinkle half the cheese over the prepared crust. Top with half the spinach mixture, then the sliced pepper. Top with remaining spinach and then sprinkle with remaining cheese. Pour the four beaten eggs over the pie and top with sliced tomatoes.

Bake at 400F for 40 to 45 minutes until set. Cut into wedges to serve.
