Paella My Way

- 4 to 5 tablespoons olive oil shopping list
- 1 large onion, roughly chopped shopping list
- 1 red or green bell pepper, julienned shopping list
- 1 teaspoon fresh garlic, minced shopping list
- 8 to 10 chicken thighs shopping list
- 2 cups uncooked long grain white rice shopping list
- 1/2 cup dry white wine shopping list
- 1 cup cooked ham, cubed, 2 links chorizo sausage, sliced or 2 sweet or hot italian sausage links, sliced shopping list
- 1 teaspoon ground turmeric shopping list
- 3 1/2 cups hot chicken broth shopping list
- 1/2 teaspoon paprika shopping list
- pinch ground thyme shopping list
- 1 can whole baby clams, drained shopping list
- 8 ounces medium shrimp, peeled and deveined shopping list
- 1 (10 ounce) box frozen artichoke hearts, thawed shopping list
- 1 cup frozen peas, thawed shopping list
How to make it
- In a large deep skillet or paella pan, heat 3 tablespoons oil. Add onions and pepper and saute until softened.
- Add garlic and saute 1 minute. With slotted spoon, remove vegetables to a platter.
- Add 1 to 2 tablespoons olive oil to pan. Saute chicken over medium-high heat until golden brown. Remove to platter.
- Remove pan from heat. Add rice and stir to coat rice with oil. Return to high heat.
- Add wine and deglaze pan. Return chicken and vegetables to pan.
- Add ham or sausages to pan along with turmeric dissolved in hot broth. Bring to a boil.
- Add paprika and thyme. Cover and simmer 20 minutes.
- Add clams, shrimp, artichokes and peas. Cook until shrimp turn pink and rice is tender.
- Serve garnished with fresh minced parsley if desired.
