How to make it

  • In a large deep skillet or paella pan, heat 3 tablespoons oil. Add onions and pepper and saute until softened.
  • Add garlic and saute 1 minute. With slotted spoon, remove vegetables to a platter.
  • Add 1 to 2 tablespoons olive oil to pan. Saute chicken over medium-high heat until golden brown. Remove to platter.
  • Remove pan from heat. Add rice and stir to coat rice with oil. Return to high heat.
  • Add wine and deglaze pan. Return chicken and vegetables to pan.
  • Add ham or sausages to pan along with turmeric dissolved in hot broth. Bring to a boil.
  • Add paprika and thyme. Cover and simmer 20 minutes.
  • Add clams, shrimp, artichokes and peas. Cook until shrimp turn pink and rice is tender.
  • Serve garnished with fresh minced parsley if desired.
