Ingredients
  • 1/2 cup of butter
  • 3/4 cup of sugar
  • 2 eggs
  • 1 3/4 cup of sifted flour
  • 1 teaspoon baking powder
  • 1/2 baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon of ground ginger
  • 1 cup of grated granny smith apples
  • 1/2 cup of extra sharp cheddar ( I like upstate New York White)
  • 1/3 cup of pecans or walnuts chopped (whichever nut you like best)

Directions
  1. Cream the butter and the sugar very thoroughly, quite flluffy
  2. Add eggs one at a time, beating well after each addition.
  3. Mix and sift the flour, powder, soda, salt and ginger.
  4. Add to butter sugar mix alternatly with the apples.
  5. Stir in cheese and nuts.
  6. Spoon batter into a greased loaf pan (8 x5 x3)
  7. Bake for 350 degrees for one hour or until it tests done.
  8. Cool on rack.
