Goat Cheese Presto

- 12 ounces brown rice spiral p-pasta shopping list
- 1 tablespoon olive oil shopping list
- 1/2 pint cherry tomatoes, or more to taste shopping list
- 2 large cloves garlic, finely chopped or pressed shopping list
- 3/4 teaspoon dried basil, or 3 tablespoons chopped fresh basil shopping list
- 4 ounces fresh soft goat cheese, room temperature shopping list
How to make it
- Cook pasta according to package directions ( about 10 minutes after boiling)
- In a saute pan, bring olive oil to a sizzle. Add cherry tomatoes, garlic, and basil. Cook on medium heat until tomatoes begin to pop.
- Drain pasta, but do not rinse; transfer to a warm serving bowl. Immediately add goat cheese and stir until it becomes a creamy coating. Add tomato mixture. Salt and pepper to taste and serve immediately.
