How to make it

  • If your brave enough to cook right in the camp fire go for it, its really simple, you just rake some coals to the side and make a nice make shift oven to cook your foil packets in, also if you choose to cook in the fire you might want to double wrap your foil packets. Otherwise pre-heat your camp grill to medium heat. Take off some foil about 18x20, or larger if you add more stuff, you want to be able to seal it properly. Drizzle the inside of the packet with the olive oil so food doesn't stick.
  • In a bowl combine BBQ sauce and honey, mix well. Add the chicken to the sauce and coat evenly. Next place the chicken on the foil packet, top with a few sprigs of thyme.
  • Next add the carrots and corn slices and lastly place a bratwurst on top and season to taste. (I like the Crazy Jayne's mixed up salt for this).
  • Seal foil packages well, but allowing some space inside so that the foods can cook evenly and steam well.
  • If your using a grill for this you want to close the lid while cooking, turning the packets 1/4 turns every 10-15 minutes for even cooking. after about 30 minutes check chicken to see if it is done. If your like me and you like to cook in the "fire" then you will less or more time depending on how hot your cooking coals are, you can also heat up some flat rocks and cook on those if you can find some.
  • When chicken is done and the veg is tender, turn out foil contents on a plate and serve with some sweet potato chips.

    This would work good with the herb and butter foil potatoes we like to make on the grill. That gives me an idea to post that recipe sometime if anyone is interested.
