How to make it

  • In a large bowl beat eggs. Add buttermilk, corn, bacon, cheddar, and oil. Beat in cornmeal, flour, cornstarch, baking powder, salt, pepper, and paprika.
  • Drop by the tablespoon or ladle full into hot oil (I prefer to use shortening) until golden brown. About 1-3 minutes per side depending on size of fritter and type of oil.
  • Pictured, Bacon Cheddar Corn Fritters made with cream corn and jalapenos. (All I had on hand was creamed corn, not bad but a little corny)

    Whoa, a heart attack in a conveniently sized nugget. Sounds great, I might risk it one day. Or maybe I'll find a healthier way to make this...? Hrm. It's worth looking into. Thanks for the inspiration!

    Top notch first post man! Not exactly diet friendly, but screw it, these sound amazing. I guess I could skip the gravy and feel better about it. :)
