Ingredients

How to make it

  • Bring a pot of water to a boil and add the sea salt.
  • Add pasta and cook 6 minutes.
  • Reserve 1/4 cup of the cooking water and drain (do not rinse).
  • Meanwhile, in a saucepan, heat water over medium heat.
  • Add onions and saute until wilted, about 3 minutes.
  • Add garlic, cook 1 minute longer.
  • Stir in broccoli, mushroom, tomato, salsa and 2-3 tbsp of the reserved pasta water.
  • Increase heat to medium-high and cover the pot.
  • Cook 3 minutes.
  • Uncover, stir in the oregano, lemon pepper and drained pasta, tossing well and adding extra pasta water if needed.
  • Add parmesan and stir through, then pour into a bowl.

    Elgourmand - depending on what the leftovers are and if they're cooked or not, you can add them in with the broccoli, the initial saute or with the cooked pasta at the end just to heat them through. I've done all of them, they all work!

    I LOVE random pantry anything. It is a specialty for me. Unfortunately it also means I have a lot of recipes that only get made once when all the ingredients just happened to align perfectly. This one sounds right up my ally.
