- The salad: shopping list
- • 1 lb uncooked pasta. I usually use three color rotini but any short pasta type will do. shopping list
- • 2 – 3 cups frozen mixed veggies, to taste. I use the carrot, green bean, pea and corn mix. shopping list
- • 2 – 3 Tbs chopped ripe olives, to taste. shopping list
- • 2 – 4 sliced fresh mushrooms, depending on size. shopping list
- The dressing: shopping list
- • 1 cup real mayonnaise. shopping list
- • 1 tsp Dijon mustard, to taste. shopping list
- • 2 Tbs dry white wine or vinegar, to taste. shopping list
- • A pinch of sweet basil. shopping list
- • A sprig of cilantro, chopped. shopping list
- • 1 tsp chili powder, to taste. shopping list
- • Salt and fresh ground pepper to taste. shopping list
How to make it
- 1. Cook the pasta just al dante, rinse with cold water and drain
- 2. Mix all of the Dressing ingredients together until smooth and creamy.
- 3. Mix all of the salad ingredients and the dressing in a large bowl and toss until well mixed.
- You can garnish this with a few sprigs of parsley or cilantro.
