Gluten Free Sponge Cake Recipe
This is perfect if you have a homemade sauce of frosting that you want to put on it.

Ingredients
  • 3/4 cup cornflour
  • 1/2 cup sugar
  • 3 eggs, separated
  • 1 teaspoon baking powder
  • 1 pinch salt

Directions
  1. In your kitchen aid or a bowl with a whisk sift the cornflour, baking powder and salt together.
  2. Beat the egg whites until stiff but not dry.
  3. Now add the yolks.
  4. Gradually beat in the sugar until mixture forms a figure 8.
  5. Fold in the dry ingredients.
  6. Divide into 2 well greased 20 cm (8") sandwich pans.
  7. Bake at 350 F for 20 minutes
