Wholesome Apple Grain Muffins

- 1 1/4 cups unsweetened applesauce (I used home-made) shopping list
- 2 tbsp ground flaxseed shopping list
- 2 tbsp fat free soy milk (I used So Good Trim) shopping list
- 1/4 cup agave nectar (or honey for non-vegan) shopping list
- 1 tsp maple extract shopping list
- 1 cup whole wheat flour shopping list
- 1/2 cup white flour shopping list
- 2 tbsp spelt (or oat) bran shopping list
- 1/2 cup rolled oats (not instant) shopping list
- 2 tsp baking powder shopping list
- 3/4 tsp baking soda shopping list
- 1/2 tsp cinnamon shopping list
- 1/4 tsp nutmeg shopping list
How to make it
- Preheat oven to 375F,grease or line 12 muffin cups.
- In a bowl, beat together applesauce, flaxseed, soy milk, agave nectar and maple extract until smooth.
- Add flours, bran, oats, baking powder, baking soda, cinnamon and nutmeg. Mix just until blended - do not beat.
- Bake for 20 minutes. Cool 10 minutes in the tin before unmoulding
