How to make it

  • Wash beet greens thoroughly
  • Cut off the stemy end from the greens and cut into 1" pieces
  • In a large skillet over medium heat, cook bacon until browned
  • Toss in walnuts and toast until they release a nutty aroma
  • Add beet greens and saute until greens are wilted.
  • Season with salt and pepper and drizzle with walnut oil.
  • Serve immediately.
