Ingredients
  • Non stick cooking spray
  • 2 tablespoons pine nuts
  • 1 clove garlic, minced
  • 8 stalks celery
  • 1 8oz tub cream cheese with dried tomato or cream cheese
  • 1/4 cup shredded Italian cheese clend
  • 2 tablespoons dry roasted shelled sunflower seeds

Directions
  1. Lightly coat a skillet with cooking spray; add pine nuts and garlic.
  2. Cook over medium heat 3 to 5 minutes or until nuts are golden brown, stirring frequently; set aside.
  3. Remove tops and wide base from celery; using a peeler, remove two thing strips from the rounded side of the celery, creating a flat surface.
  4. In a small bowl combine the cream cheese and the shredded Italian cheese.
  5. spread or spoon cheese mixture into celery.
  6. Cut each stalk into 2 inch pieces.
  7. Sprinkle half the pieces with pine nuts and the other half with the sunflower seeds.
  8. Top with celery leaves to garnish.
  9. Makes about 32 pieces.

Oh yeah, I definitely remember all those creative ways of stuffing celery - I love the sounds of this one...I've never tried using nuts as a garnish - that would add a nice salty crunch. Yum!
