How to make it

  • Fill a pot, or deep fryer with about 3" of oil, and heat on medium
  • Prepare chicken breasts by butterflying them, and then without cutting through, run your knife across them in a checkerboard type pattern so that cheese spread will fill the voids
  • In a processor add blue cheese, chipotles, mushrooms, clove of garlic, cream cheese, and a touch of black pepper.
  • Pulse until it is a paste
  • With a knife, spread a thin coat of the mixture on each breast
  • Roll the breast tightly, folding the end in as you roll
  • Bundle with cooking twine
  • Combine flour, salt, pepper and garlic powder
  • Roll the breast in the flour, shaking off any loose flour before frying
  • Place gently in 350 degree oil and cook for approx 10 minutes, turning often, until golden brown.
  • Remove from oil and allow to sit on paper towel for a few minutes
  • Cut string, and slice the chicken to bite sized servings
  • Enjoy with your choice of dipping sauce
