Creamy Chicken Fettuccine

- 1 Tsp vegetable oil shopping list
- 1 chicken cutlet (approximately 3 ounces) shopping list
- 1/2 cup sliced mushrooms shopping list
- 1 garlic clove, minced shopping list
- 1/2 cup low sodium chicken broth shopping list
- 1/4 cup evaporated skimmed milk shopping list
- 2 Tbls whipped cream cheese shopping list
- 3/4 oz grated parmesan cheese shopping list
- 1/8 tsp white pepper shopping list
- 1 1/2 cups cooked fettuccine shopping list
How to make it
- Heat oil, add chicken and cook on medium to high heat until tender (2-3 minutes on each side)
- Cut chicken into 1/2" cubes and set aside
- Combine in the skillet, mushrooms and garlic on medium to high heat for about 1 minute
- Sprinkle with the flour continuing to stir and add the chicken broth and milk
- Reduce heat to low and let simmer stirring frequently until it thickens (2-3 minutes). Stir in cheeses, pepper and return chicken and stir frequently until chicken is heated through (2-3 minutes)
- Serve over cooked fettucine

Had this for dinner tonight, and it is a gem. Even our 12-year-old nephew, king of the picky eaters, ate two servings.
