How to make it

  • Heat oil, add chicken and cook on medium to high heat until tender (2-3 minutes on each side)
  • Cut chicken into 1/2" cubes and set aside
  • Combine in the skillet, mushrooms and garlic on medium to high heat for about 1 minute
  • Sprinkle with the flour continuing to stir and add the chicken broth and milk
  • Reduce heat to low and let simmer stirring frequently until it thickens (2-3 minutes). Stir in cheeses, pepper and return chicken and stir frequently until chicken is heated through (2-3 minutes)
  • Serve over cooked fettucine

    Nicely done lizz. This fits right in with my see food diet (see food and eat it). However, that works best if the food I see isn't overly fattening. Grazie. RJ

    Great recipe Lizzcon! Thanks. I love Fettuccine Alfredo but rarely eat it as it definitely does not constitute a healthy choice. Yours looks like I'm back in business. Yey!
