Lemon Zucchini Cake With Lemon Cream Cheese Frosting Recipe

Super quick, super easy and super yummy! ...And cheap too! Note: there is no added liquid in this cake. The zucchini adds the moisture.

Ingredients
- CAKE:
- 1 box lemon cake mix
- 4 eggs; slightly beaten
- 2 c. zucchini; peeled & grated
- 4oz. pkg. instant lemon pudding
- 1t. grated lemon zest
- FROSTING:
- 3T. butter; room temp.
- 3oz. pkg. cream cheese; softened
- 1 1/2c. powdered sugar
- 1t. grated lemon zest
- 1t. fresh lemon juice
Directions
- Mix all cake ingredients on low speed for 3 minutes.
- Pour into prepared 9x13" baking pan.
- Bake @ 325F for 40 minutes.
- Remove cake from oven & let cool completely.
- Meanwhile, prepare frosting.
- Cream together butter & cream cheese.
- Add powdered sugar & mix well.
- Add lemon juice & zest and mix to combine.
- Frost cooled cake and garnish with lemon if desired.
