Shepherd's Salad

- 3 roma tomatoes,seeded and chopped shopping list
- 2 cucumbers,seeeded and chopped shopping list
- 1 bunch parsley,leaves picked,not chopped shopping list
- 1/2 c pitted and halved black olives shopping list
- 1/2 small red onion,chopped shopping list
- 2 TB cider vinegar shopping list
- 2 TB lemon juice shopping list
- 4 TB olive oil shopping list
- salt and fresh ground black pepper shopping list
- 8 oz Greek feta cheese,diced shopping list
How to make it
- Toss together all ingredients except feta cheese in large bowl. Let sit at room temperature for 1 hour to allow flavors to develop. Toss in feta cheese just before serving and taste for seasoning and adjust,if necessary.

Okay....verdict's in....the whole family gives it.....thumbs up....keeper recipe....love it....'fresh' was the word. I think the olives are the key ingredient. Very yummy. Will add to my permanent collection. Thanks!

Hope you don't mind if I use wine vinegar. This is a really great flavor combo. Put feta cheese on the shopping list and this gets made as soon as that's in hand. Grazie. RJ
