Zucchini Fritters Recipe

Ingredients

How to make it

  • grate zucchin into collander in sink
  • add salt......let sit 10 min.
  • squeeze out liquid well.
  • mix with rest of ingredients, except oil.
  • spoon spoonfuls of mixture into hot olive oil, flatten with spatula.
  • fry 3-4 min per side, till crunchy looking.

    Sounds sooooo good! Zukes are one of my favorite veggies...usually just sprayed with olive oil, salt and peppered and grilled. Mmmm. But, the old waistline may just have to take a hit with this recipe. Yum!
