Bacon-RoastedOnion-Cheese Mashed Potatoes Recipe
Mouth watering! BROC, as in bacon, roasted onion and cheese, with mashed potatoes ... what could be better? Goes with almost anything but especially steak or ribs.

Ingredients
  • 6 slices bacon, fried, drained and crumbled
  • 1 large sweet onion, thinly sliced (Vidalia or Bermuda type)
  • 1 Tbsp melted butter, or olive oil
  • 2 Tbsp cider or white wine vinegar
  • 6 medium Russet or Yukon Gold potatoes, about 3 lbs
  • 1 1/2 cups milk
  • 1 tsp EACH salt and pepper
  • 1 1/2 cups shredded aged Cheddar

Directions
  1. Preheat oven to 425F.
  2. Line a small rimmed baking sheet with foil or spray with non-stick cooking spray.
  3. In a bowl, toss onion slices with butter and vinegar until coated. Spread onto baking sheet and roast, stirring occasionally, until golden and soft, about 20 minutes.
  4. Meanwhile, peel and chop potatoes. In a large saucepan, cover potatoes with cold water; bring to a boil over medium-high heat. Cook about 20 minutes or until fork-tender. Put milk into a small saucepan and set over low heat to warm gently.
  5. Drain potatoes and return to pot over low heat for a few minutes to dry, shaking pan occasionally.
  6. Set aside about a third of the roasted onions and chop remainder coarsely. Mash potatoes while gradually adding heated milk. Stir in chopped onions, about half of each of the cheese and cooked bacon, salt and pepper. Put into a casserole dish and top with reserved onions, bacon and cheddar.
  7. Bake about 10 minutes until cheese has melted.

I almost didn't check this recipe out. I thought ...broccoli and mashed potatoes? ...Eh, dunno about that. Boy what a mistake I would have made passing this one by. This sounds amazing! Thanks for posting this.


You'll see I've changed the name to reflect the ingredients, and hopefully so others don't confuse BROC with broccoli lol! ;-)
