Ingredients
  • 1 lb. of halibut steaks, cubed
  • 1 lb. of medium shrimp - peeled and deveined
  • 1 lb. of mussels, cleaned and debearded
  • 2 lb.of clams in shell, scrubbed
  • 1 lb. of cooked crabmeat
  • 1 lb. of bay or sea scallops, rinsed and drained
  • 1/4 c. of olive oil
  • 1 chopped onion
  • 4 stalks of chopped celery, with leaves
  • 4 sliced carrots
  • 4 potatoes of peeled and cubed
  • 1 tbsp. of minced garlic
  • 1/4 c. of chopped parsley
  • 2 tbsp. of chopped fresh cilantro
  • 1 (28 oz) can of crushed tomatoes
  • 2 c. of tomato juice
  • 2 (8 oz) jars of clam juice
  • 1/2 c. of white wine
  • 2 tsp of dried basil
  • 1 1/2 tsp of dried oregano
  • 1 tbsp. of dried thyme
  • 3/4 tsp of chili powder
  • 1/8 tsp of cayenne pepper
  • salt and pepper to taste

Directions
  1. First add oil to a large pan over medium flame.
  2. Saute onion, celery, carrots, potatoes, and the garlic cooking approx. 5-10 min.
  3. Next add in the parsley, cilantro, tomatoes, tomatoes juice, clam juice, white wine, basil, oregano, thyme, chili powder, hot pepper, and salt and pepper.
  4. Now you want to lower the flame and cook around 2 hrs.
  5. Just before you serve this stew, add in the fish.
  6. Let it cook about 5 more minutes, letting all the fish get heated through.
  7. Search for unopened mussels and remove them before serving.

How much does this serve? can it be cut in half? That is 7 pounds of seafood.. It's only my husband and I. Maybe quarter it? It looks so good.
