How to make it

  • Boil the mac and put in a baking dish
  • In another pan saute mushrooms and spinach and fresh basil together in some white wine.
  • Put the mac in a baking dish and then add the sauted mushrooms, spinach and basil....then top with ricota cheese and grated jack cheese.
  • Sprinkle some fresh basil and a dash of fresh chopped up mint on top.
  • They add second layer and do same as above.
  • Make about three layers and then when finished spritz a little fresh lemon on top and put in the oven and bake. The flavors all go together and the dash of mint and lemon with the white wine is really yum.......
  • Slice up some avocado and put this along the edges of this dish and enjoy.....

    I made this the other day for supper. I was looking for something to use up the large amount of mushrooms and spinach in my fridge and this delish dish popped up! I added a half onion and red pepper to the veg mix. I didn't have ricotta, but used some greek yogurt mixed with cheddar - it turned out great. Thanks for the inspiration!
