Grilled Pork Chops With Feta Bean Dip

- For the Marinade: shopping list
- 1/2 cup olive oil shopping list
- 2 tbsp. balsamic vinegar shopping list
- 2 cloves garlic, minced shopping list
- 2 tsp. Dijon mustard shopping list
- 2 tbsp. fresh mint, chopped shopping list
- 1 tbsp. fresh oregano, chopped shopping list
- salt and pepper to taste shopping list
- 4 Pork chops shopping list
- For the bean Dip: shopping list
- 1 pkg. (150g) Apetina Feta in Oil with Herbs and Spices shopping list
- 1 15 oz. can White beans, drained and rinsed shopping list
- 2 tbsp. fresh lemon juice shopping list
- 1 large garlic clove, minced shopping list
- 1/2 tsp. cumin shopping list
- 1 tbsp. fresh mint, chopped shopping list
- 1 tbsp. fresh oregano, chopped shopping list
- 1 tsp. lemon peel, grated shopping list
How to make it
- In a large glass bowl blend the olive oil, balsamic vinegar, garlic, mustard, mint, oregano and salt and pepper.
- Mix to combine and place Pork chops in the mixture. Cover and marinate in the refrigerator for 2 hrs. or overnight until ready to use.
- Meanwhile make the dip. Puree all dip ingredients in food processor until smooth. Transfer dip to a bowl. Cover and refrigerate until ready to use.
- Grill chops on both sides until desired doneness. Discard remaining marinade.
- Serve pork chops with dip on the side. Enjoy!
