How to make it

  • Preheat oven to 350 degrees. Line 2 muffin pans with cupcake papers.
  • Cake:
  • In a mixing bowl sift to combine the sugar through the salt.
  • I use my stand mixer, but you may use a hand mixer as well.
  • Add the eggs through the vanilla to the flour mixture and beat for 2 minutes on medium speed. Make sure you scrape the bowl once within the first 30 seconds.
  • The mixture will be very thin! Pour the mixture (or use a scoop) into a 2 cup measure and pour the batter into the muffin liners 2/3 full.
  • Bake on the middle rack of your oven for 17 minutes or until the middle cupcake springs back when you touch it with your finger. Or you can stick a toothpick in the center, if it comes out clean you're all set!!!
  • Remove the cupcakes after letting them rest for about 5 minutes, onto a cooling rack. During the cooling time, make your icing.
  • Icing:
  • In the bowl of a stand mixer, combine all the ingredients. Start on low, covering the mixer with a towel at first will protect your kitchen from become a sugar bowl! (that is a kitchen tip that took a long time to figure out!!!) and increase the speed to medium or medium high. Add more milk if you feel like the mixture is too thick.
  • Ice your cupcakes with a pastry bag or spatula and sprinkle with colored jimmies.
  • Enjoy!!!
