Corn Pudding With Cheese

- 1 can (14 oz) corn or 1 bag of frozen shopping list
- 1 red pepper chopped shopping list
- 1 onion chopped shopping list
- 2/3 cup of shredded cheddar cheese or (mix of colby/monterey) shopping list
- 1/3 cup shredded mozzerella shopping list
- 1/3 cup parmesan cheese shopping list
- 2 tbsp flour shopping list
- 1-1/2 tsp ground mustard shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp garlic shopping list
- 2 eggs shopping list
- 1 (12 oz) evaporated milk shopping list
How to make it
- Preheat oven to 350
- Lightly brush a 2 quart baking dish with olive oil (do not use a casserole pan as it does not cook well) (use a baking dish)
- In medium bowl, toss corn, red pepper, onion, cheeses, flour, mustard, salt & garlic till mixed
- In another bowl, whisk eggs with milk
- Stir egg mixture into corn mixture (make sure mixed)
- Pour into prepared pan
- Top with addition shredded cheeses
- Bake for 45 minutes or till set
