Wild Berries Chocolate Pavlova

- PAVLOVA shopping list
- 6 egg whites shopping list
- 1 1/2 cups caster sugar shopping list
- 3 tbsp sieved cocoa powder shopping list
- 1 tsp balsamic vinegar shopping list
- 3 tbps finely chopped good quality dark chocolate, I used Lindt shopping list
- TOPPING shopping list
- 2 cups mascarpone shopping list
- 1/4 cup milk shopping list
- 2 tbsp vanilla confetioners sugar shopping list
- wild berries to garnish shopping list
How to make it
- Preheat oven to 350F/180C. Line a large over tray with non stick baking paper and greese it with oil or melted butter.
- Beat egg whites with an electric mixer until you get soft picks. Incorporate sugar until it dissolves between additions (about 3 tbsp each addition).
- Add cocoa, vinegar and chopped chocolate.
- Spoon this mixture onto the tray and form a circle and smooth the sides and top of pavlova.
- Place it in the oven and reduce temperature imediately to 250F/120C. Bake for 1 to 1 1/2 hours. Turn the oven off and let it cool inside the oven with the door open.
- Before serving mix mascarpone, milk and sugar. Spoon the cream on top of pavlova and sprinkle with the wild berries of your choice.
