How to make it

  • Preheat oven to 350F/180C. Line a large over tray with non stick baking paper and greese it with oil or melted butter.
  • Beat egg whites with an electric mixer until you get soft picks. Incorporate sugar until it dissolves between additions (about 3 tbsp each addition).
  • Add cocoa, vinegar and chopped chocolate.
  • Spoon this mixture onto the tray and form a circle and smooth the sides and top of pavlova.
  • Place it in the oven and reduce temperature imediately to 250F/120C. Bake for 1 to 1 1/2 hours. Turn the oven off and let it cool inside the oven with the door open.
  • Before serving mix mascarpone, milk and sugar. Spoon the cream on top of pavlova and sprinkle with the wild berries of your choice.
