Ingredients

Beets

Water

Vinegar

Salt

Pepper

Cinnamon

Sugar

Directions

Wash the beets

Cook them until they are fork-tender

Wait until they are cool enough to touch and slip off the skin

Slice beets

Put them in a clean pot

Cover them with 1 part vinegar to 2 parts water

Add 1 to 2 tsp sugar

Add salt (as much as you would add to that amount of potatoes)

Add pepper and cinnamon

Bring to a boil

To keep them - put them in a jar while everything is hot
