How to make it

  • Wash the beets
  • Cook them until they are fork-tender
  • Wait until they are cool enough to touch and slip off the skin
  • Slice beets
  • Put them in a clean pot
  • Cover them with 1 part vinegar to 2 parts water
  • Add 1 to 2 tsp sugar
  • Add salt (as much as you would add to that amount of potatoes)
  • Add pepper and cinnamon
  • Bring to a boil
  • To keep them - put them in a jar while everything is hot
