How to make it

  • PLACE THE MEAT IN A BOWL
  • PEEL AND FINELY DICE THE ONION, AND ADD TO THE MEAT
  • RINSE THE PARSLEY AND SHAKE DRY
  • RESERVE HALF THE LEAVES, FINELY CHOP THE REST AND STIR INTO THE MEAT WITH THE OREGANO, PAPRIKA, CUMIN AN SOME SALT
  • SOAK THE BREAD IN WATER AND SQUEEZE OUT ANY EXCESS LIQUID.
  • BREAK THE EGGS AND STIR INTO THE MEAT WITH THE BREAD
  • KNEAD THE MIXTURE UNTIL SMOOTH, THEN DIVIDE INTO 8 PORTIONS
  • RINSE A SOUP DISH IN COLD WATER
  • ONE AT A TIME, PLACE THE MEAT PORTIONS IN THE HOLLOW OF THE PLATE AND FRESS INTO FLAT CAKES.
  • PLACE AN 1/8 OF THE FETA CHEESE IN THE MIDDLE OF ONE HALF OF EACH BEEFBURGER, FOLD OVER THE OTHER HALF AND PRESS DOWN FIRMLY TO SEAL THE EDGES, SO THAT THE CHEESE DOES NOT LEAK OUT DURING FRYING
  • IN A LARGE FRYING PAN, HEAT THE OLIVE OIL
  • IN BATCHES IF NECESSARY, FRY THE BEEFBURGERS OVER FAIRLY HIGH HEAT FOR ABOUT 2 MIN ON EACH SIDE, UNTIL THEY FEEL FIRM WHEN PRESSED WITH A SPATULA
  • SERVE GARNESD WITH THE RESERVED PARSLEY
  • SERVE WITH A RED KOUROS OR RETSINA WINE
  • ENJOY :)

    This sounds good, especially the last line in your recipe, "SERVE WITH A RED KOUROS OR RETSINA WINE". I always like to sample the wine first, just to make sure it's good. : )
