Peach Cobbler With A Cookie-like Crust

Here's a rich peach cobbler with a sweet cookie like crust. Not for those watching their weight, but what the hay! It's summer and time for peaches!
Ingredients
- 8 fresh peaches, peeled and sliced shopping list
- 1/2 cup butter, cut into pieces shopping list
- 1/2 cup brown sugar shopping list
- 2 cups flour shopping list
- 2 cups white sugar shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
- 2 eggs, lightly beaten shopping list
- 1 cup vegetable oil shopping list
- 1 teaspoon ground cinnamon shopping list
How to make it
- Preheat oven to 350
- Spray a 9x13 inch baking dish with cooking spray
- Arrange peaches in the prepared dish
- Scatter the butter over the peaches
- Sprinkle the brown sugar evenly on top
- Set aside
- Mix flour, white sugar, baking powder and salt in a bowl
- Stir oil into the beaten eggs
- Stir egg mixture into the flour mixture
- Spoon batter over the peaches and sprinkle with cinnamon
- Bake for about 45 minutes, until crust is lightly browned
