Spiced Fresh Banana Butter

- 2 cups banana puree, (from 3 very large or 4 medium very ripe bananas) shopping list
- 3 tbs strained fresh lemon juice shopping list
- 1/3 cup sugar shopping list
- 1/4 tsp ground nutmeg (preferably fresh) shopping list
- 1/2 cinnamon stick shopping list
- 1/2 tsp vanilla extract shopping list
- pinch of salt shopping list
How to make it
- Yield: 1 1/2 cups
- Blend the banana puree with the lemon juice, sugar, nutmeg until smooth. Pour into a 2-quart saucepan and add cinnamon stick. Bring puree to a brisk bubble, over medium heat, stirring frequently. Reduce the heat to low and simmer it, until thick and somewhat reduced, and the sugar has begun to caramelize, about 15 minutes, stirring occasionally. Remove the saucepan from stove and remove cinnamon stick. Stir in the vanilla and the salt, then pour the banana butte into a clean 12-oz jar. Cover the top with a clean kitchen towel, until it's completely cool. Place a doubled sheet of plastic wrap over the opening, then apply the lid and refrigerate the jar. The banana butter will thick once cool.

Fixed this up this morning. I wasn't 100% faithful to the recipe so it can't get posted in "I Made It" but I was true to the intent.
Alterations were made to use up stuff in the kitchen:

Serving suggestion: 1/4 cup Greek yogurt, 1 tbsp Spiced Banana Butter. Call it breakfast, or call it dessert just call for it. Yumm.
