Bacon Border Quiche Recipe
I modified a recipe from Fran McCullough's Living Low-Carb to my tastes. It says it serves 6 but it served 2 in my house!

Ingredients
  • Butter
  • 6 large eggs
  • 1 cup heavy cream
  • Several drops of hot pepper sauce, or to taste, I use Frank's Red Hot Sauce
  • Salt and Pepper to taste (I leave out the salt)
  • 3 oz. can of diced green chillies, I used 4 oz. can
  • 1/4 pound chorizo, crumbled, fried and drained, I used 8 slices of Hearty Thick Cut Bacon instead.
  • 1 cup diced Muenster cheese
  • 1/3 cup chopped fresh cilantro (I skipped)
  • 1/3 cup chopped scallions (I used a bit of regular onion)

Directions
  1. Preheat the oven to 350 degrees.
  2. Have ready a buttered 8-inch quiche pan.
  3. Beat the eggs in a bowl with the cream, hot pepper sauce, and salt and pepper.
  4. Add the remaining ingredients, mix well, and pour into the quiche pan.
  5. Bake 40 minutes, or until golden brown on top.
  6. Serve hot, warm, or at room temperature.

i have a suggestion
we use hormel real bacon bits instead of frying bacon.
don't use imatation. tastes horrible
