How to make it

  • Peel, quarter and boil the potatoes for twenty minutes.
  • Remove the potatoes with a slotted spoon.
  • Add the kale to the boiling water. Cook for 3-4 minutes.
  • Mash the potatoes, stir in the kale. Sprinkle with pepper.
  • Melt butter in a frying pan.
  • As soon as the mixture is cool enough, form in to patties and lay in the hot butter.
  • Cook on both sides until browned and serve.
  • Leftovers

  • You may add bullion powder, vegetables and cooked meat of your choice to the leftover broth to make a lunchtime soup.
  • I have successfully warmed up leftover patties in the microwave to add as a side dish a day later.

    sounds good. I tried to make Kale chips from a recipe online. I cooked them too long and they became bitter and yucky but the ones that weren't were yummy. I believe they had salt and evoo.
    The Dutch families in the town I used to live in mixed them cooked with mashed potatoes and sausage and raved about it but didn't ever serve it to company as it was a everyday type recipe not considered fancy.
