Squeaky Kale

- 1 pound kale, cut up shopping list
- 2 potatoes shopping list
- 2 tablespoons unsalted butter shopping list
- sprinkle freshly ground pepper shopping list
How to make it
- Peel, quarter and boil the potatoes for twenty minutes.
- Remove the potatoes with a slotted spoon.
- Add the kale to the boiling water. Cook for 3-4 minutes.
- Mash the potatoes, stir in the kale. Sprinkle with pepper.
- Melt butter in a frying pan.
- As soon as the mixture is cool enough, form in to patties and lay in the hot butter.
- Cook on both sides until browned and serve.
Leftovers
- You may add bullion powder, vegetables and cooked meat of your choice to the leftover broth to make a lunchtime soup.
- I have successfully warmed up leftover patties in the microwave to add as a side dish a day later.
