How to make it

  • Roll pastry to a 14 inch circle about 1/8 unch thick Place on a 12 inch pizza pan, turning up and fluting edges
  • Prick all over with a fork
  • Bake 350 for about 15 minutes and cool
  • Drain cherries reserve juice
  • Blend cream cheese with first amt of sugar
  • Add eggs and beat well
  • Pour this mixture onto the partially baked crust , top with nuts and return to oven and bake until cream cheese is set and crust browned about another 10 to 15 minutes
  • Combine second amt of sugar with salt and cornstarch in a panAdd cherry juice and cook and stir over low heat till thickened
  • Remove from heat and add butter and almond extract
  • Spread over cheese layer in pan
  • Cut into wedges to serve warm
  • Top pieces with a dollop of whipped cream or ice cream if desired

    Someone picked some fresh cherries for us, and I froze the extras. I just may have to thaw them out again and give this a try.
