Portobella Mushroom Fajitas

- 3 T lime juice shopping list
- 1 T olive oil shopping list
- 2 garlic cloves, minced shopping list
- 1/2 t ground cumin shopping list
- 1/4 t crushed dried oregano shopping list
- 3 T water shopping list
- 10 ounces fresh portobella mushrooms shopping list
- 1 medium red, green or yellow sweet bell pepper, cut into strips shopping list
- 4 green onions, cut into 1 1/2 inch pieces shopping list
- six 7 inch flour tortillas shopping list
- lime wedges, optional shopping list
How to make it
- Combine first six ingredients in a large bowl
- Wipe mushrooms with a clean damp cloth or rinse lightly and pat dry
- Remove stems and save for chopping up for another recipe
- Slice caps 1/4 inch thick
- Place mushrooms, peppers and green onions in the marinade and toss to coat
- Cover and marinate at room temp for 15-30 minutes
- Grill vegies on an oiled vegetable grilling tray for 8-10 minutes, on a medium hot grill over direct heat until vegies are tender and lightly golden, turning once and brushing generously with marinade
- Wrap tortillas in foil and place on grill until warm, about 3 minutes
- To serve, spoon mushroom mixture onto tortillas and roll up
- Serve with lime wedges to squeeze onto mixture
- Lime wedges can also be grilled, if desired
